The History of Low-Carb Keto Diets
The Low-Carb Keto Diet is not only incredibly popular, it has been shown to heal illnesses ranging from epilepsy1 to cancer.2 Although this diet seems to have suddenly appeared, there’s a long historical tradition of low-carb diets. They date back decades, to folks like Dr. Atkins,3 as well as hundreds, if not thousands of years prior.4 Here’s a helpful history of the low-carb keto diet for you!
Following the Keto Diet Since 2014
I went on a Keto Diet in 2014. In addition to the benefits, I’m super excited to share the history of the low-carb keto diet with you. Why? Because it’s the perfect intersection of my college education (BA in history from Columbia University) with the self-taught medical research skills I’ve gained over the last 25 years of studying yoga, Ayurveda, and traditional medicine.

The History of Low-Carb Keto Diets
Understanding the Low-Carb Keto Diet is more urgent than ever. More than 80% of adults in the US are now considered overweight or obese.5 Those of us at the forefront of the Paleo Diet movement know that this hasn’t always been the case. Mankind’s original diet is that of a hunter-gather who eats animal protein and forages for nuts and berries.6
Low-Carb Diets in the Age of Enlightenment
During the agrarian period of the last 10,000 years or so is when man became afflicted with the diseases of civilization.7 Due to these issues, we see some of the first organized attempts at low-carb diets during the Age of Enlightenment, the period from around 1685 to 1815. During this time European philosophy, politics, and science were radically transformed. Knowledge of dietary medicine also grew tremendously. In the 1790’s, just after the French Revolution, John Rollo, a Scottish military doctor reportedly treated patients with diabetes with a low-carbohydrate diet.8
Low-Carb Diets in the Victorian Era
In the 1860’s, William Banting, a formerly obese Englishman published his, “Letter on Corpulence Addressed to the Public” which outlined a diet for weight loss in which he gave up bread, sugar, beer, and potatoes.9
Charlie Foundation and the Classic Ketogenic Diet
In 1923, a doctor at the Mayo Clinic designed the Classic Ketogenic Diet. Created by Dr. Russell Wilder as a treatment for epilepsy, it is considered the original Ketogenic Diet. According to the Charlie Foundation a 4:1 ratio of fat to protein and carbs is the gold-standard for classic Keto, a 3:1 is also included in descriptions of the classic Keto Diet in most publications:
Classic Keto is a structured diet. The ratio of this diet can be increased for a more therapeutic outcome, and also liberalized for better tolerance. This diet is also considered a low glycemic therapy and results in steady glucose and insulin levels.10
Low-Carb Diets After World War II
In the late 1950’s Dr. Richard Mackarness published the book, Eat Fat and Grow Slim.11 This book challenged classic calorie theory and praised healthy low-carb, high-fat primitive diets, that lacked processed modern foods, such as those followed by the Inuit. A number of other low-carb diet books and papers were published during this time.
Modern Low-Carb Diets and the Atkins Diet
In 1972, Dr. Robert Atkins came out with one of the most influential diet plans of the 20th century. His book, Dr. Atkins Diet Revolution, has sold over 15 million copies. Atkins believed in complementary medicine using acupuncture, ozone therapy, and herbs in his clinic. His low-carb diet approach was based on the work of Dr. Alfred Pennington a physician who used the diet during WWII. Pennington’s work on the subject was published in the Journal of the American Medical Association12
What is the Keto Diet?
Although the term is loosely thrown around today, the Keto Diet is not just another low-carb diet. It is a high-fat diet that is low in carbohydrates and protein. In fact, even if you’re on a low-carb diet, it is not the Keto Diet if you are eating more protein and carbohydrates combined than fat.
What is the Best Keto Diet?
The question I’m asked most often is, what is the best Keto Diet? Since we’re all biochemical individuals this question is a bit tricky. I followed a 1.5:1 Keto Diet for a while, but found I do best on a 1:1 Keto Diet, due to an increased need for protein due to healing from multiple sclerosis. Following the 1:1 Keto Diet means eating the same amount of calories from fat as from protein and carbs combined.

- 1¼cups blanched almond flour (not almond meal)
- ¼cup cacao powder
- ¼teaspoon celtic sea salt
- ½teaspoon baking soda
- 2 large eggs
- 2tablespoons coconut oil,room temperature
- ¼cup honey
- ¼teaspoon vanilla stevia
- ¾cup zucchini,grated

In a food processor combine almond flour and cacao powder

Pulse in salt and baking soda

Pulse in eggs, coconut oil, honey, and stevia

Briefly pulse in zucchini

Transfer batter to a greased 6.5 x 4 inch small loaf pan, dusted with almond flour

Bake at 350°F for 35-40 minutes

Lest We Forget: What Was the Madison Transformation? What Did We Learn?
The Chief of Change: David Couper and the Transformation of the Madison Police Department

Madison’s Chief of Police is a position that represents the Madison Police Department while also upholding its values such as integrity, diversity, leadership, and a commitment to building a relationship with and serving the Madison community. David Couper dedicated his time and efforts to this cause when he served as the Madison Chief of Police from 1972 to the year 1993.
Couper dedicated 20 years to serving as Madison’s Chief of Police. Couper had previous experience working as a police officer, serving in the Minneapolis Police Department and later os the Chief of Police in Burnsville, Minnesota. He holds a Master’s Degree from the University of Minnesota in Sociology and Deviant Behavior. He applied for the chief’s position in Madison after Chief Emery took a medical retirement. In preparation for ordination in the Episcopal Church he also attended graduate school at Edgewood College.
Couper took the position as Chief of Police in 1972. Before Couper became police chief the MPD was very different.
“MPD was a traditional police department of the late ’60s and early ’70s,” Couper says. “White, male, high school graduates to whom the ‘law was the law,’ students were suspect, and anti-war protesters the enemy. (Police) were quick to use their fists and nightsticks, but thankfully not their firearms.”
As the successor of hard-liner Wilbur Emery, Couper sought to create a relationship between the police department and the community as well as create a more diverse police department.
“You cannot do the job if you do not have the support of the community, and police officers should represent the community they serve,” Couper says. “When I first became Chief of Police there were 300 employees and only one of them was black.”
Couper worked to create more diversity in the department by instating rules that called for more diversity in the MPD Academy, a program that trains new officers. It is not easy to enact change. When Couper first proposed his ideas for changing the Madison Police Department he was met with resistance from fellow police officers. Although hesitant Couper recruited his officers to his cause to change the MPD for the better.
“I was passionate and persistent on the matter and it took time, about 10 years before it was successful,” he says.
In that time, Couper successfully recruited more women and people of color to train and become police officers of the MPD.
“Half of the classes were composed of women, and people of color” Couper says.
In addition to addressing diversity problems, Couper worked to change the way the MPD interacts with and is perceived by the Madison community.
“You cannot do the job unless you have the support of the community” says Couper.
Couper’s desire to build trust in the community stemmed from the controversy surrounding his predecessor, Wilbur Emery. Emery was the chief of police during the 60s and the height of anti-war protesting. The difference between Emery and Couper is “night and day,” says Madison historian Stuart Levitan. “An ex-marine, Emery was prim and proper, a true cop of the ’50s. He would not have survived the era of community policing.” David Couper was “more focused on community relations,” Levitan says.
In an article from the Isthmus in 2009 by Josh Wimmer titled “ The cop who trains the cops,” Lt. Kristen Roman said Couper’s vision “changed the police department significantly, most notably in terms of getting women into the profession, that’s part of what drew me here.” Another factor that draws people to the MPD is “the philosophy that policing is about community partnerships and exercising responsibly the authority that we’re given” Roman says.
“In the 60s during anti-war protest, the police worked to prevent protesting from happening” Couper says.
During these protests the MPD used excessive force on demonstrators. Police relations were strained. In an effort to counteract this, Couper committed to building a positive relationship between the MPD and the community.
“We helped them protest by facilitating instead of preventing protesting,” Couper recalls. “We trained and supervised our police to do this.”
During his time as Chief of Police, protests were a common occurrence. “People protested anti-war, housing, and apartheid, there were also protests for the Mifflin block party and marijuana rallies,” Couper recalls.
Most importantly, during these protests, Couper and his department did their best to facilitate the events and make sure that everyone was safe while participating. Sometimes there were complaints when Couper did this.
“There was one time when protesters took to the streets and blocked traffic and many people were late for work. People were calling in asking me to resign, saying I wasn’t doing my job by allowing them to block traffic and protest,” Couper remembers.
Couper’s response was to take the criticism in stride: “who is it hurting by allowing them to protest? It’s their right and our job as police officers is to make sure they do it peacefully and that they are safe.”
Being the Chief of Police is not an easy job.
“The job of a police chief is to wear two hats – one hat is as the leader of the police, the ‘top cop,’” Couper says. “But a chief must also wear a second hat–the community’s chief who looks out for their interests and welfare. Wearing two hats always causes conflict both inside the police department and outside in the community. Nevertheless, both hats must be worn.”
Couper, now an Episcopal pastor, spoke out about police brutality last year
Couper retired from the position as Chief of Police in 1993. Today, Couper remains an active member of the community. He became a pastor and he continues to actively advocate for responsible and just policing, often weighing in on topics like police brutality.
“Since 9/11 police have become increasingly more militarized,” says Couper.
Couper stresses the importance of discussing this issue, and has been very vocal about the arrest of Madison teenager Genele Laird where police were using excessive force. In an article by Abigail Becker in the Capital Times, Couper says, “We can’t be training police this way anymore.” Couper is invested in this issue and has written a book titled Arrested Development on his thoughts about how police officers can improve.
Above all, Couper says, “Police need to sit down with the community and discuss these issues.”
“There will always be tensions between the police and the community, especially as our nation diversifies. Two big mistakes in America is 1) thinking everything has to do with race and 2) thinking none of this has to do with race,” he says.
Couper has left a lasting impression on the Madison Police Department. He changed the department to be more inclusive and diverse and successfully bridged the gap between the police department and the community.
In Couper’s 20 years as police chief, his proudest accomplishment is the institution of Community-Oriented Policing.
“I worked with educated, well-trained, creative, and caring cops,” he says. “Excellence in policing is now up to them. They need to stand up and speak out when mistakes are being made and be committed to learning from those mistakes, being accountable and doing better in the future.”

It's often been said that anything can be fixed with duct tape and WD40. And, as a guy with extremely limited handyman skills, I really like this flowchart.

While this might seem like a dramatic oversimplification with respect the human body, I think there are actually some noteworthy parallels. To prove this, let's take a look at a study my buddy, Mike Reinold, co-authored back in 2008. While they looked at range of motion changes in professional pitchers after an outing, the findings of the study that I always keep coming back to have more to do with the absolute range of motion numbers in the data set (moreso than the changes). Take a look:
Looking at the mean shoulder total motion pre-throwing, MLB pitchers averaged about 191 degrees. However, when you look at the standard deviation of 14.6 degrees, you'll see that there were guys down around 175 degrees (very hypomobile or "tight"), and others up around 206 degrees (very hypermobile or "loose").
Speaking very generally, the tight guys need more WD40 (range of motion work), and the loose guys need more duct tape (stability training). Now, here's what you make your mark as a coach: identify the exceptions to this rule.
For example, when you have an otherwise "tight" guy who comes back from a long season in with a significant range of motion increase at a joint, it could mean that he's developed instability (e.g., blown out a ligament). Or, maybe you see an otherwise "loose" guy who has lost a considerable amount of range of motion, it could mean that he's really hanging out in a bad pattern, developing musculotendinous shortness/stiffness that "overpowers" his ligamentous laxity. Or, he might be really out of alignment, or have developed a bony block.
Identifying outliers - exceptions to the rules - is a crucial part of evaluation success and subsequent programming. As I've often said, don't just focus on average.

Building Mobility Efficiently: Modified Pigeon with 1-arm Child’s Pose
Here's another Sturdy Shoulder Solutions sale inspired post. The Modified Pigeon with 1-arm Child's Pose is another new drill we've busted out in our warm-ups to get a little more bang for our buck. It's particularly useful for pitchers, who need to get into their lead hip (adduction) while getting lat length, scapular upward rotation, and apical expansion on the throwing shoulder.
A few big coaching points:
1. You should feel a stretch in the outside of the front hip, but nothing in the knee (particularly the inner part). If you're feeling it in your knee, you've probably set up incorrectly.
2. Think of a stretch along the entire outside of the torso and arm: quadratus lumborum, lats, and long head of triceps, especially. If you pinch at the front/top of the shoulder, ease off it a bit.
3. Breath in through the nose and exhale fully through the mouth as if you're blowing out birthday candles (and hold for a count of three before inhaling again). You should feel your abs turn on as the shoulder stretch increases. Do five breaths.

Paleo Rosh Hashanah Menu
Rosh Hashanah, or Jewish New Year, is one of my favorite holidays. I get so many requests for my Paleo Rosh Hashanah Menu and healthy Jewish High Holiday recipes, that I had to share it all with you here!
When is Rosh Hashanah?
I love Rosh Hashanah because it generally falls around the end of summer, or early autumn, when a bounty of fruits and vegetables are at peak harvest. It’s a wonderful time to look back on the year that’s passed and to give thanks for the harvest in the fields and in life. It’s also a good time to set intentions for the upcoming year. This year, Rosh Hashanah begins at sundown on Sunday, September 9th.
Apples Dipped in Honey
Rosh Hashanah is a time when our menu is filled with symbolic foods. According to one of my favorite food historians, Claudia Roden, at Jewish New Year it is a “widespread custom to eat a piece of apple dipped in honey while a prayer is said asking God for a sweet year.”
What Foods are Eaten at During Jewish New Year?
Another custom is to eat a new fruit of the season, usually a pomegranate, hence the Pomegranate Salad I include at our High Holiday table. Roden adds that round foods such as meatballs are eaten to embody the aspiration that the year ahead is full and rounded.

There are so many incredible things to choose from, but I think the Low-Carb Strawberry Shortcake is a showstopping way to end your holiday meal!

Exercise of the Week: Wall Slides with Upward Rotation and Lift-off to Swimmer Hover
With this week’s $50 off sale on Sturdy Shoulder Solutions, I wanted to introduce a new drill I’ve started using. The wall slide with upward rotation and lift-off to swimmers hover effectively blends two schools of thought: Shirley Sahrmann’s work and that of Functional Range Conditioning.
1. With the wall slide portion, we drive scapular upward rotation.
2. With the lift off portion, we get scapular posterior tilt and thoracic extension (as opposed to excessive arm-only motion).
3. With the swimmer hover, we lengthen the long head of the triceps and even drive a little bit more serratus anterior recruitment as the scapula rotated around the rib cage.
