Cinnamon Coffee Cake

Homemade Cinnamon Coffee Cake is one of my favorite comfort foods. Growing up my mother used to buy a tasty frozen coffee cake at the grocery store as a special treat.

How to Make Homemade Coffee Cake

My healthy homemade coffee cake is made with only six ingredients –almond flour, salt, baking soda, coconut oil, honey, and eggs. This easy coffee cake recipe can be thrown together in no time flat. The topping has three additional ingredients –coconut sugar, cinnamon, and sliced almonds.

Almond Flour Coffee Cake

Like the one Mom used to buy, this cake is moist and has a sweet cinnamon topping. It’s perfect with a cup of my Dandelion Coffee on a lazy weekend morning.

Homemade Cinnamon Coffee Cake is a fabulous low-carb, paleo brunch dish for Easter Sunday!

Cinnamon Coffee Cake

Servings8

Ingredients

Cake

• 2½cups blanched almond flour (not almond meal)
• ¼teaspoon celtic sea salt
• ½teaspoon baking soda
• ¼cup coconut oil
• ½cup honey
• 3 large eggs

Topping

• ¼cup coconut oil,melted
• ¼cup coconut sugar
• 2tablespoons ground cinnamon
• ½cup sliced almonds

Instructions

1. Grease a 9 inch round cake pan with coconut oil and dust with almond flour
2. In a food processor, combine almond flour, salt, and baking soda
3. Pulse in coconut oil, honey, and eggs
4. Spread the batter into prepared baking dish
5. To make topping, combine coconut oil, coconut sugar, cinnamon, and sliced almonds in a small bowl
6. Sprinkle topping over cake batter
7. Bake at 350°F for 25-35 minutes
8. Cool and serve

Kosher for Passover Coffee Cake

This low-carb Cinnamon Coffee Cake is Kosher for Passover. Like all of my recipes, it does not contain any chametz.

This Cinnamon Coffee Cake recipe is adapted from one on page 24 of my first book, The Gluten-Free Almond Flour Cookbook, published in 2009. Both coffee cake recipes are dairy-free. All of the recipes in that cookbook are 100% dairy-free!

3 Spring Cleaning Tips for Your Sauna

Enjoy your sauna for much longer when you start properly maintaining it. Don’t forget to give the following areas some much needed attention:

Floor
The warm, moist environment of many saunas can foster the growth of bacteria on the floor and other surfaces of the sauna. These bacteria include tinea pedis, more commonly known as athlete’s foot, states the Mayo Clinic. Public saunas can also spread the bacteria Staphylococcus aureus, which can cause serious skin staph infections, including the deadly methicillin-resistant Staphylococcus aureus–MRSA–according to the Centers for Disease Control and Prevention.

To prevent these infections from spreading, regularly sweep and mop the sauna floor using a household floor cleaner or a water and bleach solution. Let the floor dry and the sauna air out before continuing use. Source: OurEverydayLife

Benches
Don’t use harsh or abrasive chemicals on benches, as these can bleach and warp the wood, ruining the grain and turning it grey. Specialist sauna cleaners are commercially available too. These are designed to be gentle on the wood, and will also give your sauna a pleasing fragrance. Source: Build

Heater
Depending on what type of heater you possess in your sauna there are different ways of cleaning it.

If you heat with a wood burner, than you will have to remove the ash build up constantly.

If you have an electric heater, all you need to do is use a nonabrasive cleaner and sponge to wipe off any fingerprints, dust, grime, and debris that may be present.

If you have suana stones that produces your sauna heat, than you will want to make sure you are soaking your rocks in a mild detergent and water solution about once a month, and also replacing any cracked stones as soon as you notice that they are cracked. Source: DoItYourself

Techno Security And Digital Forensics Conference CA 2019 – Recap

by Mattia Epifani The Techno Security and Forensics CA conference took place between 11th and 13th March at The Hilton Torrey Pines in La Jolla (San Diego). More than 200 attendees were present, coming from different fields like digital forensics, e-discovery, incident response and cybersecurity. Most of the attendees were from the U.S. but many people from Canada and Europe were also present. Forensic Focus was present for the entire conference and documented it in real-time on Twitter.
