Keto Corn Dog Mini Muffins are a delicious mouthful of low-carb goodness. Made with 7 ingredients total, you can whip these up for your Super Bowl parties, children’s birthdays, or even a low-carb Easter brunch. They’re super easy to make and an adorable appetizer or kid-friendly snack.
Keto Corn Dog Mini Muffins Recipe
The base of this easy low-carb snack recipe is almond flour. All you need to make it in addition to the almond flour is flaxmeal, eggs, vinegar, salt, baking soda, and hot dogs. Really, it’s that easy! This Keto Corn Dog Mini Muffin recipe is based on my beloved Low-Carb Cornbread recipe which has only 6 ingredients total!
Low-Carb Serving Suggestions
We like to serve these with mustard which is a great low-carb condiment. I stay away from store-bought ketchup since it often has added sugar, but it’s very easy to make your own low-carb ketchup. The boys like to eat these with Choloula sauce to add a spicy kick!
- 1cup blanched almond flour (not almond meal)
- 2tablespoons golden flaxmeal
- ¼teaspoon baking soda
- ¼teaspoon celtic sea salt
- 1tablespoon apple cider vinegar
- 3 large eggs
- 4 hot dogs,cut into 1 inch pieces

In a food processor combine almond flour, flaxmeal, baking soda, and salt

Pulse in vinegar and eggs

Transfer batter 1 tablespoon at a time to a paper lined mini muffin pan

Place one piece of hot dog into each muffin cup

Bake at 350°F for 20-25 minutes

Cool 15 minutes

Dairy-Free Keto Snack Recipe
It’s so hard to find good keto recipes that are dairy-free. But these Keto Corn Dog Mini Muffins are perfect if you’re on a low-carb, dairy-free diet. And although not all keto recipes are gluten-free and paleo, these are, because I made them. I’ve been on a gluten-free diet since 1998. I went on a grain-free diet in 2001 and it’s been so helpful, I’ve stuck with it ever since.
